White Bean Artichoke Enchiladas

This is one of my favorite recipes, and my boyfriend, Zach, loves these too. The white beans and artichoke are a nice way to spice up routine enchiladas. Not only are they delicious, but they are also really quick and easy to make!

To Make the Filling

  1. Chop the onion up, saute in veggie broth over medium heat
  2. Cut the artichoke hearts into quarters (add to saute pan)
  3. Cut the olives in half (add to saute pan)
  4. Sauté until the onion is soft/translucent
  5. Add the beans to the pan, and mix everything up

To Prepare

  1. Preheat oven to 350°
  2. Pour a layer of salsa in a glass baking pan
  3. Heat up a frying pan, and warm the tortillas on each side
  4. Add bean/veggie mixture to tortillas, roll up, place in pan (folds down)
  5. Cover with a layer of salsa
  6. Put tinfoil on top of the pan
  7. Bake on 350 for about 25-30 minutes

Let cool for a few minutes, and enjoy!!
