Two of my favorite things are avocados and kale. I eat at least one avocado a day as part of my breakfast, and I oftentimes incorporate something avocado-y into either my lunch or dinner (or both). So, I love avocados. I also love kale. My whole family loves kale. Here’s a picture of my mom with a bunch of kale:

This recipe is one of my favorites, because it combines a creamy avocado “alfredo” sauce with pasta and lots of kale. It is also super easy, and it makes tons of leftovers for lunches!
Cook the pasta according to the directions on the package. When there is about 1 minute left, add the kale to the boiling water. Drain the pasta and kale.
To make the sauce add everything to a high speed blender and blend it up (depending on the strength of your blender, you might want to soak the cashews for a couple hours before blending).
Mix everything up! The sauce thickens a bit as it stands, so wait about 10 minutes. Add salt to taste (the salt is important!), and enjoy!!!
