I love pasta, I love pesto, I love pistachios, and I love arugula. The combination of all four of these delicious things into one meal is also something that I love, and something that you are bound to love as well!
Cook the pasta according to the directions on the package.
To prepare the pesto, combine everything into a blender, and blend it up! I prefer to use an avocado instead of oil in my pesto sauces, as it creates a rich creamy flavor.
To prepare the vegetables, slice the cherry tomatoes in half and saute? in a pan with the mushrooms until soft.
Mix everything together, along with some extra arugula, and enjoy!!!
